Cooking Tips: You don't even need to boil water! For stir fries, try soaking the noodles in a pot of hot tap water for 2-3 minutes instead of boiling the noodles. Rinse in a colander. Stir fry the noodles to taste with your accompaniment. The result should be a firmer noodle with almost a third less fat since you it washed away with the water. If you want these noodles in a salad, boiling them is preferred for optimum texture. Rinse well under warm running water to wash away the fat and then cool the noodles with cold running water.
